Wheel and Tire Help Please

I have a serious question about the Wheels on my Mustang.  As it is, I am running 18x9 Wheels with 245 45 ZR 18 Tires.  I am building the Car to do Auto Crossing, Solo II and Track Days.  The Tires are not wide enough to protect the Rims.  I can go up to 255 50 ZR 18 on the Back but am at the limit for the Front.  I am thinking about buying two 8" wide Wheels for the Front and buying two 255 50 ZR Tires for the Rear keeping the 9" Wheels on the Rear.  Would having Staggered Wheels on the Car make any difference in what I am wanting to do with my Car?
