How many quarts should I use in my 67 GT500 with a stock oil pan. It has AC and the factory oil cooler setup.

Actually no, not for my 67 GT500. I have a very nice original 70 Boss 302 that I like to keep the OEM looking battery in.

Question for the class; if the power steering pump on a 67 GT500 is over full, will it push fluid out? I have a little weepage  in the tray straight down from the pump and it is over full.
