I know there are engine service manuals for the 428 SCJ, but I have not been able to find a service manual for the (1968) 427 side oiler ?
Looking for an original service manual, not a new (after market version) that covers maintenance, repairs, assembly/disassembly, torque specs, tuning info, etc..

Mike there is not something put out by Ford that covers all of the questions you posed as effectively then some of the after market books . As a example How to Rebuild Your Big Block Ford has the information you seek. https://www.ebay.com/itm/284303532050
The factory shop manual covers the 1968 Cougar GT-E 427 in great detail. I recommend the paper copy. Much easier to use than either the digital version or the CD / DVD.
