Is there a comprehensive guide/list to the early changes for the '67? Something that describes the variations that morphed the car from early; two-piece grille, side scoop lights, antenna placement, etc, to later '67?

A good start is the registry.
You can get one from member Dave Mathews, the '67 registrar.
Get a copy (paper or electronic copy of one of the past SAAC magazine articles. JD penned a fairly long list of the Shelby differences a short while ago. Sorry don't have the issue number handy
Be aware that there are a tone of Shelby running changes and another long list of just Ford running changes that year also

Thanks Jeff. The 15 page article is in the Fall 2013 issue of The Shelby American.
Not complete as more has been discovered but a start.

I believe the antenna placement was Dealer applied, but proposed by Shelby for the location desired.
JD's article in the Fall 2013 "The Shelby American" issue is an excellent place to start.

If you are a member of SAAC you can download/print it from the www.SAAC.com website member's section past issues of The Shelby American, steps below...
