Title: 67 GT500 temperature gauge

How accurate accurate are the temperature gauges on a 67 GT500?

With everything working adjusted and working as designed they do what they were designed to do. Indicate a range in relationship to extremes Since there are no numbers nor is the size large enough to do so. Just like any Mustang with that style gauge. 

Guess there is another problem or issue your having

The gauge works fine but you need to use an original Autolite or the Motorcraft replacement sensor. Aftermarket senders will read abnormally high.

They are few and far between. Post a wanted ad. Check Ebay.

The one you want to have the best chance at success will be marked ether Motorcraft or Autolite and have a red insulator.
